1. Use High-Quality Ingredients
For a perfect paella, choose fresh and high-quality ingredients:
- Bomba rice: Ideal for absorbing flavors without overcooking.
- Homemade broth: Essential for a great result.
- Proteins: Chicken and rabbit (for Valencian paella) or seafood (for seafood paella).
- Vegetables: Tomato, bell pepper, and green beans.
- Key spices: Saffron and paprika.
- Extra virgin olive oil: A must for a great sofrito.
2. Prepare a Good Sofrito
The sofrito is the foundation of flavor. Brown the meats or seafood in olive oil, add the vegetables, and cook them over low heat until they are soft. Incorporate the grated tomato and paprika just before adding the rice.
3. Control the Proportions
